Making gelato my way was not supposed to be easy, it was about making the most delicious gelato possible, trying new ideas, learning about new ingredients, studying the world and learning from others. And the gelato does not always turn out perfect the first try, something like climbing to the top of a mountain, it is not always about the summit, it is about the journey. In gelato, learning, trying, learning again and trying again to make the gelato perfect is what drives me.....a mantra for me when I make gelato....
